2 Minute Banana Cupcakes, Low Carb Gluten Free, LCGF, The290ss

My sister in law got me hooked on this delicious cupcakes, they are so good and I don't feel guilty every time I have one. And I'm not usually the kind of person who likes to try new things specially if they are diet related. Keep reading for the ingredients.

Besides being really delicious and moist it's fast and easy to make, it seriously takes only 2 minutes for it to cook. Below you can find the list of all the ingredients that you are going to need, but it makes only one cupcake, so if you are planning on making more of these just adjust the quantities.

-1 egg
-1/2 tbsp of vanilla
-1 tbsp of almond milk
-1/4 cup of almond meal
-1 tsp of flax seed meal
-1/2 tbsp of cinnamon
-1 tbsp sugar (I used stevia)
-1/4 tbsp of baking powder
-1/2 banana
-2 tbsp of whipped cream
-1/4 aprox of fruit of your choice (I used strawberries)
-Walnuts (optional)

1. In a blender mix the egg, vanilla and the egg.
2. Proceed to add the remaining ingredients and mix for 1-2 minutes.
3. Place in a microwave safe dish and place it in for 2 minutes. Let it cool.
4. Top it with whipped cream or yogurt, walnuts and the fruit. That's it now it's time to enjoy.

If you have any trouble finding the almond meal it looks like this one. I found mine at Walmart and it was a little pricey but it does last a while and the flavor it's delicious so I think it's worth it.
