Carrot Cake from Scratch Recipe



So this carrot cake was kind of an accident. I was the other day craving cake so much, because at work we bought one for a birthday coworker and I didn't get a chance to try it.




But to be honest I was not gonna go to the store to buy one, I'm in a store all day everyday so the idea of going back wasn't really realistic lol.




So I checked my pantry and the fridge looking for ingredients to make the cake and I had most of the items I needed except for pecans but it was fine, I just wanted cake!! And I was surprised it turned out so good and moist.

For this recipe you are going to need:

-2 cups all-purpose flour
-1 cup  light brown sugar
-2 cups  finely grated carrots

-3/4 cup oil 
-3 large eggs
-1/4 cup sour cream or greek yogurt 
-2 teaspoons vanilla extract
-1/4 teaspoon ground nutmeg
-1/2 teaspoon salt
-1 teaspoon baking soda
-2 teaspoons ground cinnamon



How to make this cake:

1. Start by pre- heating the oven to 350 F degrees.

2. In a bowl, mix the brown sugar and oil until they are completely incorporated and add the cream or yogurt. Once the mix starts getting thick add the eggs one by one and add the vanilla, cover and set aside.

3. In a different bowl combine the flour, nutmeg, salt, cinnamon and baking soda. Stir until all the ingredients are combined and then add the to the wet mix until there's no chunks flour left. Add the carrots with a spatula but be careful to not overmix them.

4. Add the batter into a already buttered or sprayed pan and bake for 30 to 35 minutes or until the cake pass the toothpick test.

5. Let the cake cool down and decorate with Cream Cheese Frosting.
