This is one of my favorite meals to make because how fast and easy it is to make. Another plus for this recipe is that you can add as many vegetables as you want for your family and my son loves this recipe .. even tho it can be a little hot.
A quick fix for the hotness is to add sour cream and that seems to help and makes it creamy as well and with a side of rice you can have a meal for the family that is going to satisfy them and most likely ask for seconds.
For this meal we are going to need:
-2 cups of green beans
-Country style ribs in cubes (the bones can be kept for flavor)
-Garlic and salt
-El pato salsa
1. Start by heating up a pan with 1 tbsp of oil, once it's ready add the ribs and stir once in a while and season with the black pepper and garlic salt.
2. While the ribs are cooking start chopping your vegetables in 1/2 inch slices, chunky pieces because you are going to let the whole thing simmer for a while. You can also cut potatoes to add them to the mix just fry them in a separate pan and put aside.
3. Once the meat has changed color and cooked to medium rare add the carrots, celery and onions. Let them cook for a couple of minutes covered so the flavors integrate in the stew.
4. Add the tomatoes, bell peppers, green beans and the salsa del pato mix, cover and cook for 5 minutes. Check the stew it should be ready when the vegetables and meat are soft.
This is the salsa I used in case you have trouble finding it, it should be on the hispanic section in your supermarket.
Now make some rice and with corn tortillas it would be perfect. You can check the videos below so you see how I make mine.
