RECIPE: Mexican Sopes with Beans, Cheese and More

I love sopes, they are a great Mexican food that can be found in pretty much every state but with the topics variations which make them versatile and unique.

Another plus to this dish besides the flavors it brings to the table, is how affordable it is to make it. I bought the flour and I've been able to make this 2 times for my family and have enough to make it a couple of times more, which is perfect if you are trying to save and still bring delicious recipes to your family. And even tho the recipe calls for frying I'm pretty sure you can make them in the oven without problem.


INGREDIENTS FOR THE SOPES:
-1 1/2 cup of flour ( I used Maseca, can be found on the hispanic aisle at the supermarket)
-1 1/4 warm water

INGREDIENTS FOR THE FILLINGS:
-Cheese
-Guacamole or avocado
-Chicken
-Sour cream
-Beans
-Pickled onions
-Sliced tomatoes
-Salsa
-Lettuce

DIRECTIONS:
1. In a large bowl mix the flour and the water until you have a play- doh like dough, sometimes it might need a little extra water but try adding it using tablespoons until you have the right consistency.

2. Take the dough and form little balls. Place them inside a ziploc bag and roll it into a flat tortilla but not too flat.

3. Place the tortilla shaped dough in a hot pan and flip after one minute you want it to cook but not completely. Take it out of the pan place on a plate and fold the edges up to shape it as a sope. It's kinds like creating the edge of the pizza but instead of rolling you just put it up.

4. Once you have 2 or 3 ready heat up a pan with enough oil and add one by one flipping them after one minute and take it out of the oil and place it in a strainer with paper towels to drain the oil of the sopes as much as you can.

5.  It's time to add the toppings grab one of the sopes and spread the beans, top with meat or chicken, lettuce, tomato, onions, cheese, avocado, sour cream and salsa and you are done now it's time to enjoy!

The topping are not limited to the ones I listed here, you can use chorizo con papas or eggs and bacon and more.
